Veal

We do Veal periodically as demand requires. We get our veal from a neighbor and family friend. The calves are humanely raised in groups, and are very well taken care of.

Normally, we post on our sign & on Facebook that we will be doing  fresh veal.  We process the veal, fill our orders, then fresh freeze it. When we run out of veal in the freezer, we do another veal. Some items have a higher demand than others, so we do get in some veal shanks, loins, liver, sweetbreads, and top round (scallopini) as we need to (when we are between veals).
